Kagoshima Prefecture New Potatoes Hokkai Kogane
This variety has yellowish skin that can appear golden, and its shape resembles May Queen potatoes. The eyes are shallow, making it easy to peel.
It pairs exceptionally well with oil. It is said to have a low content of reducing sugars, which cause browning when fried, making it ideal for fried dishes like French fries and potato chips.
It also holds its shape well when cooked and has a slightly fluffy texture, somewhere between Danshaku and May Queen potatoes. This makes it versatile for various dishes such as stews and curries!
